Cheesy Cauliflower “Muffins”

I love cauliflower!  I find it to be one of those fun foods … not because it is fun to eat but because you can do so many different things with it.  I am always looking for a new way to prepare this low calorie veggie!

Here is the latest recipe (experiment) – Cheesy Cauliflower “Muffins”.  These “muffins” are great as a snack or a side to any meal.

 

Cheesy Cauliflower “Muffins”

Makes approx. 12 muffins

Ingredients

2 cups finely riced, raw cauliflower
2 eggs, beaten
2 tablespoon melted butter (I used zero calorie butter spray)
1 cup reduced fat grated cheddar cheese
1 tablespoon dried onion flakes
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp baking powder

Instructions

Combine the cauliflower, eggs, & melted butter in a medium bowl.  Add the grated cheese and mix well.  Stir in the onion flakes, salt, pepper, garlic powder, baking powder and coconut flour until thoroughly combined.

Divide the batter evenly between 12 greased muffin cups.

Bake in a preheated 375 degree (F) oven for 45 minutes or until golden brown.  Remove and serve warm or cold.

These come out very moist and fluffy … a nice little afternoon snack today 🙂
