New Kitchen Habits Take Over … Again … Mini Apple Pies

So tonight we had left over Turkey Pot Pie Turnovers from last night for dinner.  They are so stinkin’ yummy!!  SO much better then the frozen store bought ones hands down.  I had a little bit of left over pie crust from making them so I decided to find a way to use it up.

This has been a new goal of mine that has somewhat taken over my life in the kitchen.  Or I should really say has had me spending a lot more time in the kitchen lately.  I used to be TERRIBLE about throwing out food … I realized that I could save A LOT of money and even have a little bit of creative fun by just taking the time to find a way to use food that I would have normally thrown away.   Here is one such situation …

I simply took the left over pie crust dough and rolled it flat on the counter (sprinkle flour on counter first) (yes, this can be a little bit messy).  Cut out circles that are large enough to fill a muffin tin.  I used a drinking glass (as both my roller and my dough cutter).  Spray muffin tin with non-stick spray, and pop each circle into the muffin tin.  Gently push dough down just enough to make it snug.  Then fill … I had some apple pie filling on hand so that’s what went in mine.  You could use any pie filling, jam, fresh fruit with ricotta, hmmmm … now my mind is churning.

Pop them in the oven for about 15-20 minutes (I baked at 350) or until the crust is baked through.  These mini apple pies are hot and delish … I will be honest here … I only took one bite cause I really didn’t need the extra today.  But my husband and my daughter we happy I took the extra few minutes to whip something sweet up for them as a little after dinner treat.
